Free Range Ham
The Italian take on ham, our Prosciutto Cotto is made with free range Australian pork leg. Deboned and slowly steamed to preserve the flavours of the meat, our Cotto boasts a subtle, yet sweet pork flavour.
We also offer a Smoked Cotto with a subtly smoky flavour that’s gently cold smoked. Both are best served thinly sliced as a part of a sandwich, or baked inside focaccia with mozzarella. Serve with a cool climate Verdelho.

Free Range Mortadella
A classic salumi, Mortadella is a favourite among Italian children. Made with minced free-range pork and hand-cut pork fat, our Mortadella is delicately cured and slow-cooked, which results in a smooth and creamy pork flavour. Slice it paper thin and enjoy it on its own, or layer it in a panini. Available in both the original flavour, or with black pepper. We like to enjoy ours with a glass of Sangiovese.

The pistachio mortadella is a flavour bomb - loaded with premium crunchy and delicate pistachios, and the creamy sweet flavour of gently cooked free-range pork—a firm favourite in the Salumi family. Our truffle mortadella features hand-cut Western Australian black truffle, exuding a distinct earthiness, subtle umami richness, and intoxicating aroma that only truffles can offer. Perfect stuffed into a panino or added to a grazing board.
